Ingredients for the Salsa:

  • 1 large ripe mango, diced
  • 1 cup cucumber, diced (peeled if desired)
  • 1 small red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • 1 small jalapeño, finely diced (seeds removed for less heat)
  • 2 tbsp fresh cilantro, chopped
  • 1 small avocado, diced (optional, added before serving)

Ingredients for the Kombucha Dressing:

  • 1 tbsp Liquid Remedy’s Mango Passion Kombucha
  • 1 tbsp olive oil
  • 1 tsp lime juice
  • 1 tbsp agave syrup or (vegan) honey
  • 3 tbsp dijon mustard
  • ½ tsp chili powder or smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a small bowl or jar, whisk together the kombucha, olive oil, lime juice, honey or agave, mustard and chili or paprika powder. Season with salt and pepper to taste.

  3. If needed, drain any excess liquids from the salsa. Then pour the kombucha dressing over the salsa and toss gently to coat everything evenly.
  4. Cover and refrigerate for 15 - 20 minutes to let the flavors meld together. Add avocado just before serving if using.
  5. Serve with tortilla chips, as a taco topping, or with grilled protein of choice!
